The calendar may say it’s autumn, but the tomato vines are still pumping out beautiful fruits.

There may be a cullender full of green tomato plant to utilise once the temperature omit for fall , but I ’m more interested with the beautiful fruits that are still ripening on the vine . I do n’t need to let a single orange , black , reddened or pink jewel go to thriftlessness .

I ’m spoiled after spending the last few months picking home - grown tomato plant and tossing them onto green salad or slice and topping them with fresh Basil the Great leaves . tomato in all colors , shapes and sizes have come up their mode into many meals from margherita pizza pie to fresh pasta sauce ; herby frittata to those binge full of stuff and nonsense .

Because I detest to allow go of that fresh sapidity , I take time to squirrel some aside for winter . Here are four means to savour summer tomatoes long after the season ends :

Roast ’em and freeze ’em .
